Spicy Thai Peanut Sauce

A simple Thai inspired peanut sauce that you can use with any protein and starch! This one was used for some marinated tofu and white rice, topped with cilantro, micro greens, and some crushed peanuts for some added crunch!
1 can coconut milk
1 cup peanut butter (unsweetened and smooth)
2 Tablespoons soy sauce
1-2 Tablespoon maple syrup
2 Tablespoons rice vinegar
Juice from 1/2 a lime
1 Tablespoon (+/-) MisoHeat
Combine ingredients in a sauce pan over low-medium heat, stirring so it doesn’t stick. Continue 2-3 minutes or until combined. Adjust lime and MisoHeat to taste. Let cool!
