Spicy cucumber salad

This spicy cucumber salad (traditionally called sunomono salad) is a delicious side dish for a summer meal. Spicy yet refreshing, the substitution of MisoHeat for a more typical pepper flakes or chili oil brings so much depth and flavor to such a light vegetable.


3 hot house cucumbers (the ones wrapped in plastic with thin skin)
Heavy pinch of salt
1/4 cup rice vinegar
1.5 tablespoons of sugar or honey
Splash of light soy sauce
MisoHeat to taste (we used at least a tablespoon)
Sesame seeds

Slice the cucumbers thin (mandolin or food processor works best) and toss with pinch of salt
Let sit for 10 mins
Drain thoroughly (a salad spinner works great)
Combine rice vinegar, sugar, soy, and MisoHeat in a separate container and then pour over the cucumbers
Toss with desired sesame seeds and enjoy!
