Rice Noodle Salad Dressing

Were you at the vegan tasting fair at Leevers Locavore in Denver? Or just looking for a light, fresh meal this January? 

We threw together a simple dressing for a fresh veggie and rice vermicelli noodle salad. Throw in some extra veg, tofu, another protein, whatever floats your boat! The dressing is where the magic happens ✨ 

1/2 cup coconut aminos
2 Tbsp maple syrup
1 Tbsp sesame oil 
2 Tbsp rice vinegar 
1-2 Tbsp MisoHeat 

Grated carrots
Thin cucumber slices 
8oz rice vermicelli noodles

Whisk all of the dressing ingredients until fully incorporated.
Carefully boil your noodles and run cold water on them to cool them down after cooking.
Throw on some sesame seeds or green onion!
