Peanut Pineapple & Pork Skewers

To celebrate our giveaway with Mama Lam's, we created a marinade combining their Malaysian Peanut Satay Paste and MisoHeat Chili Paste!
The sauce came together in under 15 minutes, just budget in at least an hour (up to 24 hours!) to let the delicious flavors marinate your protein. We used pork, but this recipe would be great with chicken thighs, beef ribeye, or tofu!

3 lbs protein, cubed
1 pineapple, cubed
1 lime, zested and juiced
1 can coconut milk
1 cup Mama Lam’s Peanut Satay
3 Tbs MisoHeat
3 Tbs honey
Green onion for garnish
Cilantro for garnish
Serve over coconut rice

1. Add lime zest and juice, coconut milk, Peanut Satay paste, MisoHeat, and honey to a sauce pan.
2. Warm over the stove while whisking together, letting it boil for 8 minutes. Let it cool completely in the fridge.
3. Cube 3lbs of protein into 1-2" pieces, and the pineapple to the same size.
4. Once the marinade is fully cooled, add 1/3 of the sauce into your protein, mixing it until fully covered. Let sit at least one hour in the fridge, overnight for maximum flavor.
5. Once marinated, build the skewers alternating protein and pineapple.
6. Grill on medium heat, spraying the grill and the skewers with avocado oil. Grill for 12-15 minutes, turning every 3 minutes. Using about a cup of the sauce, baste the skewers twice while on the grill.
7. Serve over rice, garnishing with green onion and cilantro.
