Easy One Pan MisoHeat-Mustard Chicken

This chicken dish is a breeze and full of flavor. A one pan miso-mustard chicken recipe, perfect for a weeknight dinner.
1/2 cup chopped scallions and extra for garnish
3 Tbsp Dijon mustard
2 Tbsp minced ginger
1/2 Tbsp minced garlic
1 Tbsp red miso paste
1/2-1 Tbsp MisoHeat, depending on desired spice level
2 tsp brown sugar
1/2 cup of oil (canola, grape seed)
4 chicken thighs (skin/bone to your preference)
1. Preheat oven to 450
2. In a bowl, combine together the scallions, Dijon, ginger, garlic, miso, MisoHeat, and brown sugar in a bowl. Mix until emulsified.
3. Season the chicken thighs with salt and pepper and place on a pan. If desired, oil and season broccoli, bok choy, or other vegetable and add to the pan.
4. Pour the mixture over the chicken and rub well. Rub any extra mixture onto the broccoli.
5. Roast for around 30 minutes, until chicken is fully cooked and vegetables are tender. The broccoli may need to be removed from the pan before the chicken.
Serve with rice, mashed potatoes, or another starch.
